GREEN Monster Smoothie!!

Let me just start by telling you the thought of drinking liquid spinach did not appeal to me.  I don't like weird textures, funky smells or even looking at ingredients mixed together that are out of the normal.  My throat knots up, my mind takes over and usually before I can even bring the food/drink to my mouth I have convinced myself it is NOT for me.   So how can it be that I really LIKE this smoothie? 

I can HONESTLY tell you this smoothie is very good.  It tastes mostly like banana with a slight hint of peanut butter and It is a great source of vitamin A, C, K, iron, folate and lutein.  

Here are the ingredients - I hope you will give this a shot because it truly is a great source of protein and fiber and great vitamins!

Ingredients:

1 frozen sliced banana
1 Tablespoon peanut butter
1/2 cup 0% Vanilla Chobani Greek yogurt ( I used Oikos Vanilla Greek Yogurt)
1 cup Unsweetened Vanilla Almond Breeze (or other kind of milk)
4 cups baby spinach (or more, or less)

Directions:  Combine all ingredients in a blender and blend until smooth.

Nutritional stats:  350 calories, 10g fiber, 21g protein

Grain Free Peanut Butter Chocolate Chip Cookies

Grain Free Peanut Butter Chocolate Chip Cookies!!!  I just cannot wait to try this recipe because I can finally eat a cookie without feeling completely guilty!  The cookie is loaded with antioxidants, Vitamin B, folic acid and magnesium - this will provide antioxidants, energy and can help you avoid migraines (if you are susceptible to them).   Check out the recipe and let me know what you think!!

Grain Free Peanut Butter Chocolate Chip Cookies
1 1/4 c canned chickpeas, rinse and patted dry
2 tsp vanilla extract
1/2 c + 2 tbsp natural peanut butter (regular peanut butter will make these too oily)
1/4 c honey
1 tsp baking powder
1/2 c chocoalte chips

Instructions: 
Preheat oven to 350°F. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Stir in chocolate chips.  With wet hands, form into 1 ½ inch balls. The mixture will be very thick and sticky. Lightly press cookies onto a parchment paper-lined baking sheet. Bake for about 10 minutes.  Remove and allow to cool.  Makes about 20 cookies

Gluten Free Chocolate Chip Cookie Bars


Gluten Free Chocolate Chip Cookie Bars

 INGREDIENTS:
2 ½ cups Pamela’s gluten free baking mix
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 ½ cups real butter melted and cooled slightly
1 cup  light brown sugar
1/2   sugar
2 large eggs
2 teaspoons vanilla
2 cups chocolate chips (use your preference of semisweet, bittersweet, milk, white, peanut butter or your favorite)

DIRECTIONS:
Preheat the oven to 325 degrees. Adjust the oven rack to lower-middle position. Line a 9X13-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch so you can grab those edges and pull the brownies from the pan after they have baked.

Mix the flour, salt, and baking soda together in medium bowl; set aside. Whisk the melted butter and sugars in a large bowl until combined. Add the eggs and vanilla and mix well. Using a rubber spatula, fold the dry ingredients into the egg mixture until just combined; do not overmix. Fold in the chocolate chips and turn the batter into the prepared pan, smoothing the top with the spatula.



Bake until the top of the bars is light golden brown, slightly firm to the touch, and edges start pulling away from sides of pan, 35-45 minutes. Cool on a wire rack to room temperature. Remove the bars from the pan by lifting the foil overhang and transfer them to a cutting board. Cut into 2-inch squares and serve.

Gluten Free Monster Cookies

I have found the cookie of my dreams.  This recipe is for a GLUTEN FREE peanut butter, chocolate chip, oatmeal and M&M cookie.  This cookie is sure to please everyone in the family.  It is a very simple recipe but make sure you do not over bake them!!

Monster Cookies 
1 1/2 cups creamy peanut butter
1 cup light brown sugar
1 cup white sugar
8 tablespoons of unsalted butter, softned
3 large eggs
1 tablespoon vanilla extract
4 1/2 cups quick cooking gluten free oats
2 teaspoons baking soda
1 cup semi sweet chocolate Chips
1 cup M&Ms plain 

Preheat oven to 350*F.  Spray cookie sheet with nonstick spray.

In a large bowl, combine peanut butter, sugars and butter.  Use an electric mixer to mix until well combined.  Mix in eggs and vanilla.  Mix in the oats and baking soda.  Then STIR in the chips and M&Ms.

Drop the dough by the heaping spoonfuls onto the prepared cookie sheets. 

Bake approximately 10 minutes.  Do not overbake.  Cool for a few minutes before transferring to a cooling rack.  Once the cookies are completely cooled, store them in an airtight container.

Gluten Free Banana Cream Cheese Pudding


Banana Cream Cheese Pudding:

6-7 bananas
Gluten free short bread cookies
1 8oz cream cheese
1 can Eagle Brand
1 lg instant vanilla pudding
2 ½ cups milk
1 sm cool whip
1tsp vanilla

Beat together cream cheese and Eagle Brand , set aside.  In another bowl mix vanilla pudding, milk and vanilla.  Mix with cream cheese mixture.  After mixed well, fold in cool whip.  Layer bananas, pudding and cookies ending with cookies on top.

Keep Refrigerated.

ENJOY - I know our office did (but I think I enjoyed it the most) !!
